Superfood Salad with Delite Mandarin Dressing
- 500g mixed salad leaves, washed
- 200g baby spinach leaves, washed
- 1 punnet cherry tomatoes, sliced
- 2 Delite mandarins, peeled and sliced or segmented
- 1 Avocado, halved, stone and skin removed, sliced
- 1 tablespoon chia seeds
- 1 Tablespoon pumpkin seeds
- 1 Tablespoon sunflower seeds
- handful of roasted almonds
Dressing:
- Finely grated rind and juice of 2 Delite mandarins
- ¼ cup olive oil
- ¼ cup sweet chilli sauce
- 2 cloves garlic, crushed
- 1 fresh birds eye chilli, seeded and sliced on the diagonal
- 2 Tablespoon fresh coriander including stalks, roughly chopped
- 2 Tablespoon sesame seeds, roasted
- sea salt and freshly ground black pepper, to season
Method
- Combine all the salad ingredients together in a large salad bowl.
- Prepare the dressing by whisking all the ingredients together in another bowl, then pour over the salad and gently toss just before serving.
